I tell you, you’re not gonna believe how easy it is to make these cookies. It’ll take me longer to write up this recipe than it’ll take you to make the best peanut butter cookies ever. You don’t need any sort of mixer; a whisk or even a fork will do.
You only need
1 Egg
1 cup Sugar
1 cup Chunky Peanut Butter
Smooth peanut butter is, of course, acceptable, but the chunky type gives the cookies that little extra oomph.
How easy is it?
1. Preheat the oven to 350°. It’s a good idea to grease your pan, but I think you can survive without.
2. Beat together the egg and sugar, then add the peanut butter.
3. Set that dough on your pan. The cookies expand as they bake, so make them about 30% smaller than your goal size. Make sure to leave them room to grow, or you’ll end up with one peanut butter mass.
4. Bake for 10 minutes. Let them cool a little in the pan before you move (or eat) them.
That was so simple! These are delicious! How could we possibly make them better?!?
I’m glad you asked!
Just for kicks, I looked through my fridge and pantry to see what I had on hand that would compliment the pb and guess what:
I made eleven unique cookie flavors!
Honestly, any way you like your peanut butter sandwich is gonna be great in cookie-form. Don’t be afraid to try unexpected things!
The ginger variation was definitely my favorite, with the banana a close second.
Three ingredients and a virtually endless array of variations! What’s totally your new favorite cookie recipe?? Yeah, that’s what I thought.
