INGREDIENTS:
For prepping tofu:
- tofu – approx 200g cut into cubes
- corn flour/corn starch – 2 tbsp
- red chili powder – 1/2 tsp
- pepper powder – 1/2 tsp
- salt to taste
- oil – 2 tbsp
For the sauce:
- red onion medium sized – 1 chopped into 1 inch pieces (or use spring onion whites/shallots)
- green bell pepper (green capsicum), chopped into 1 inch pieces – 1/2 to 1 cup
- red bell pepper (red capsicum), chopped into 1 inch pieces – 1/2 cup
- garlic – 2 cloves chopped fine
- ginger, finely chopped – 1 tsp
- green chili, finely chopped – 1 tsp
- celery, finely chopped – 1-2 tsp (optional)
- soy sauce – 1 &1/2 tsp
- tomato ketchup – 1 & 1/2 to 2 tbsp
- red chili powder – 1/2 tsp
- pepper powder – 1/2 tsp
- corn flour/corn starch – 1 tbsp
- salt as needed
- water
- sliced spring onion – 1-2 tsp for garnish (optional)
INSTRUCTIONS:
- Add chili powder, pepper, corn flour and salt. toss and mix well but gently to not break the cubes.
- Place the tofu cubes in a bowl.
- Pan fry in oil, turning them over gently as they fry.
- Transfer onto a paper towel.
- To the same oil, add chopped red onion, peppers, ginger, garlic, green chili, celery, mix. Stir fry
- Add soya sauce, tomato ketchup, mix. add red chili powder, salt, pepper powder, mix.
- Add the corn flour slurry to the pan, stir, cook until it thickens.
- Add pan fried tofu.
- Cook for 1-2 min.
