Today I am sharing with you a delicious recipe for gingerbread cupcakes! My mum and I thought it would be really cute if we put some mini gingerbread men on top of cupcakes for Christmas, so we did. I am definitely not a baker (I prefer the eating part), but these were actually quite fun to make and tasted amazing. This recipe makes 12 cupcakes which last for around three days.
Ingredients //
+ 1/2 cup of unsalted butter (softened to room temperature)
+ 1/2 cup of buttermilk (at room temperature)
+ 1/2 cup of brown sugar
+ 1/2 cup of molasses
+ 1/2 teaspoon of ground ginger
+ 1/2 teaspoon of nutmeg
+ 1/2 teaspoon of baking powder
+ 1/2 teaspoon of bicarb soda
+ 1 and 1/3 cups of plain flour
+ 1/4 teaspoon of salt
+ 1 teaspoon of ground cinnamon
+ 1 teaspoon of vanilla extract
+ 1 egg (at room temperature)
+ Store bought / Homemade, mini gingerbread men
Step 1 //
Preheat the oven to 180 °C and place your cupcake holders in a muffin tray that holds 12 cupcakes. My mum and I used hard, paper cupcake holders that could be placed on an oven tray and because they are small, we made more than 12 cupcakes.
Step 2 //
Beat the butter and brown sugar together in a large bowl until creamy and then beat in the egg. After this, beat in the butter milk, molasses and vanilla.
Step 3 //
Sift the flour, baking powder, bicarb soda, salt, cinnamon, ginger and nutmeg together in a different bowl until combined. Carefully pour this mixture into the large bowl used in step two. Beat until just combined.
Step 4 //
Fill the cupcake holders with the mixture, allowing space for the cupcakes to rise. Bake for around 20-25 minutes and allow to cool before icing. Once we had iced a cupcake, we sifted a small amount of cinnamon on top and then immediately added a mini gingerbread man on top. If you follow our method, I reccommend icing and decorating one cupcake at a time so the icing doesn't harden. We made our icing glaze with a mixture of two cups of icing sugar and enough hot water to make the right spreading consistency.
