These are my absolute favorite chocolate chip cookies...with a little extra chocolate!
Preheat oven to 350°F. Baking Time: 8-10 minutes
Ingredients
Large Bowl
In large bowl, beat 1/2 cup butter (softened), 3/4 cup white sugar, 1 egg, and 1 teaspoon of vanilla extract until light and fluffy.
Medium Bowl
Combine the 1 cup all-purpose flour, 1/3 cup cocoa powder, 1/4 teaspoon baking soda, 1/4 teaspoon baking powder, and 1/8 teaspoon salt. Once blended, preferably with a whisk, fold in 1 cup mini semi sweet chocolate chips. (or whatever you prefer, mini M&M's are a great substitute)
Lastly
stir the medium bowl mixture into the large bowl mixture until well blended.( I like to make a well in the middle of the large bowl mixture, and fold in the medium bowl mixture ). I like to spoon my cookies out by the tablespoon, roll them in my hand and squish them down with a fork onto a parchment paper-lined baking sheet.
Once they came out of the oven, I add a sprinkle of shredded coconut. It's delicious.
