Eggs Sardou

INGREDIENTS:

  • 1 pkg of hollandaise sauce
  • 1 T extra virgin olive oil
  • 1 minced shallot
  • 1 minced garlic
  • 1 lb spinach, fresh
  • 1 jar artichoke hearts
  • 4 eggs poached


INSTRUCTIONS:

  1. Prepare your hollandaise sauce.
  2. In a small pan, heat the oil over medium high heat. Add the shallot and garlic and cook for a minute.
  3. Prepare your poached eggs.
  4. Assemble plates by dividing the spinach evenly on both plates.
  5. Scoop out 2 eggs for each plate. Divide the artichokes among the two. Scatter some shallots and garlic on each plate.
  6. Drizzle as much hollandaise as you like over the eggs.
