Grilled Salmon with Herb Yogurt Sauce Recipe

INGREDIENTS:

Fresh Herb Yogurt Sauce:

  • 1 cup watercress
  • ¼ cup cilantro
  • ¼ cup mint
  • 1 scallion, cut up
  • 1 cup low-fat yogurt
  • 1 tablespoon fresh lime juice
  • sea salt and fresh ground pepper, to taste


Grilled Salmon:

  • 8 ounces fresh salmon filet
  • 1 teaspoon olive oil
  • sea salt and fresh ground pepper


INSTRUCTIONS:

Fresh Herb Yogurt Sauce:

  1. Place watercress, cilantro, mint and scallion in food processor and process until minced; add yogurt and continue processing until blended with green specks still remaining. Season to taste with salt and pepper.


Grilled Salmon:

  1. Rub olive oil on both sides of salmon and season with salt and pepper. Grill until just done. Do not overcook. Serve with Fresh Herb Yogurt Sauce.
