Khajur roll recipe is a hea;thy sugar free dessert with dates,almonds and other nuts. In this recipe gulkand is added for more flavor and taste.

Ingredients
- 1 cup black dates,seeded
- ¼ cup finely chopped almonds
- ⅛ cup finely chopped cashews.
- ½ tablespoon gulkand
- ¼ cup roasted nuts flour
- ½ teaspoon ghee
Instructions
- Chop dates finely/pulse it for few seconds.
- Chop the nuts finely.
- Heat ½ teaspoon ghee in a kadai and fry the nuts till golden and fragrant.Remove to a plate.
- In the same kadai add the pulsed dates and gulkand. Mix well and cook for 5-7 minutes,until the whole mixture becomes a lump.
- Add the fried nuts and mix well. Remove from flame and let it cool for 10 minutes.
- While the mixture is still warm,apply some ghee to your palms and shape it into a log.
- Roll the mixture over the roasted nuts powder and let it sit for 20 minutes. (optional step)
- Once set,slice the log into equal sized squares.
- Store the khajur rolls in a airtight jar.
Notes
1. Along with dates you can use dried figs,just soak the figs for 10-15 minutes in warm water before pulsing.
2.Roasted nuts flour-Dry roast almonds and pistachios until fragrant and blend in to a fine powder.
3.Instead of nuts powder you can roll the log in poppy seeds.
4. To ease the slicing ou can keep the log in fridge for 15 minutes.
