I am a person who suffers from Hormonal Imbalance, and having such means having a hard time controlling my cravings, I am thinking of eating more of meat products, a lot of times craving for sweets, sometimes salty foods. I am not a vegetable person but I am trying to be one. So here's a menu i prepared for myself today. :) LUMPIANG SARIWA is a combination of vegetables wrapped in a wrapper made with egg, its sauce is a combination of peanut and garlic with a salty-sweet taste that satisfies my craving at the same time giving myself a break from unhealthy foods.
INGREDIENTS
2 Tbsp Cooking Oil
3 Cloves Garlic Minced
1 Medium size Onion
2 cups Carrots julienne cut
2 cups Sweet Potato julienne cut
2 cups Baguio Beans julienne cut
1 cup shrimp sliced peeled and sliced into thin strips
salt and pepper to taste
Procedure:
1. In a pan saute garlic, onions and shrimp.
2. Add carrots and sweet potato,
3. Stir fry for 5 Minutes then add Baguio Beans
4. Add salt and pepper according to you taste preference.
5. Set aside and let it cool.
INGREDIENTS FOR EGG WRAPPER
2 Eggs
1 Cup All Purpose Flour
2 Cups water
1 tsp cooking oil
PROCEDURE
1. Combine all Ingredients in a bowl and stir using a whisk until the mixture is free from lumps.
2. heat a flat bottom pan, put a small amount of oil to prevent the wrapper from sticking in the pan.
3. lower the fire and put enough amount of mixture to thinly cover the bottom of the pan.
4. wait until the mixture became solid in form and firm enough not to break when lifted from the pan.
5. gently remove the cooked egg wrapper and transfer it in a dry clean plate.
INGREDIENTS FOR THE PEANUT GARLIC SAUCE
3 cups Water
2 tbsp Flour dissolved in 3/4 cups water
2 tbsp Soy Sauce
3 tbsp Brown Sugar
3 Cloves Garlic Minced
1 cup Toasted Peanuts pound
PROCEDURE
1. Combine all Ingredients except flour
2. Bring to Boil
3. Gradually add dissolved flour and stir until the desired texture is achieved.
PLATING
wrap the sauteed vegetable in the egg wrapper (add pechay baguio if desired). pour desired amount of the sauce on the top of the Lumpiang Sariwa. Best served with a smile :)
