Today, October 15th, is National Chicken Cacciatore Day.
This is a chicken dish of Italian origin. Cacciatore is Italian for "hunter" and alla cacciatora is a dish that is prepared hunter-style.
Hunter style dishes use tomatoes, onions, herbs, frequently with (bell) pepper and occasionally with wine. The wine can be either red or white; they type depends on the region of Italy.
Other vegetables can be added, and the dish can be casseroled, baked or made into risotto.
