Today, January 29th, is National Corn Chip Day.
Corn chips, like tortilla chips, are made from corn, but the latter undergo a process of nixtamalization during their creation, resulting in chips with a milder flavour and aroma. Corn chips are quite thick, rigid and crunchy, and are fried in oil or baked, and tend to be noodle or scoop shaped in comparison to tortilla chips' triangular shape.
A popular snack food, they are often eaten with dips of varying types, with the shape making it easy to scoop the dip up with.
