Today, November 2nd, is National Devilled Egg Day.
Devilled eggs, also known as eggs mimosa, date back to at least ancient Rome.
To make devilled eggs, the eggs are hard boiled and then peeled. The boiled eggs are then cut in half lengthwise. The yolk is then removed.
The removed yolks are then mashed and mixed with other ingredients. There are a wide variety of different ingredients added, such as mayonnaise and mustard which is the traditional "devilled" recipe. Other ingredients added include cayenne pepper, chillies, turmeric to name just a few. There are many more different variations.
