The pudding is made with cornmeal, known as "indian meal," rather than wheat flour, cultivation of which was learned from the natives. Milk is used always instead of water, and local sweeteners such as molasses and maple syrup, with spices such as cinnamon and ginger.
Butter and eggs may also be added to improve consistency and raisins and nuts for flavour.
