Herbs have uses in medicine and perfume, but in this respect it's their use in foods. Culinary herbs refer to the leafy, green parts of a plant, whilst spices come from other parts. Vegetables may also use green, leafy parts of the plant, but herbs are used in smaller quantities and as a flavouring.
Salt is primarily sodium chloride, and is also used as a food flavouring. Although salt is vital, too much salt can be bad for you. Most processed foods already have salt in them, so adding extra in cooking is not really necessary.
Replacing salt in your cooking with herbs can be good for you.
