Today, November 9th, is National Scrapple Day.
Scrapple is an American dish that was created by the Pennsylvania Dutch in around the 17th century, although there are similar European dishes that pre-date it.
Scrapple is a dish designed to make use of scraps that could not be sold. Pork scraps, cornmeal, wheat flour and spices, often with buckwheat flour as well, are made into a mush that is formed into a loaf. The loaf is then cut into slices, which are then fried in a pan.
An efficient way of making use of leftover pork from a pork roast. It can also be purchased ready made of course.
