Today, November 18th, is National Vichyssoise Day.
Vichyssoise is a type of soup believed to have been invented by a French chef in New York City. Its definite origin is uncertain, as it is claimed to be both French and American. A Frenchman in the US combines both. The name comes from the French town of Vichy.
This is a thick soup made from chicken stock, cream, potatoes, onions and puréed leeks.
Although usually consumed cold, the soup can also be had hot.
