Pasta Chicken and Avocado Salad

INGREDIENTS:

  • 250g Penne Pasta
  • 1 Avocado, peeled, stoned and cubed
  • 2 Red Apples, small, sliced
  • 1 TB Lemon Juice
  • 2 cups Cooked Chicken Fillets, cubed
  • 3 cups Mixed Salad Greens (your choice)

Dressing:

  • 1/3 cup Sour Cream
  • 3 TB Canola Oil
  • 2 TB Red Wine Vinegar

INSTRUCTIONS:

  1. Cook, drain and cool the Pasta as per the instructions on the packet.
  2. Sprinkle the Lemon Juice over the Avocado and the Apples to prevent them from discoloring.
  3. Place the Pasta, Avocado, Apples, Chicken and Salad Greens in a large mixing bowl - pour over halfof the dressing and toss well - transfer to a serving bowl.
  4. Drizzle over the remaining dressing and keep chilled until ready to serve.
