Peri Peri Chicken (Nanadoo’s)
Ingredients:
Chicken With Skin 1 Kg
Ginger, Garlic, Green Chilies (Fine Chopped) ½ Cup
White Vinegar ¼ Cup
Olive Oil ¼ Cup
Yellow Food Colour Pinch
Paprika Powder 1 Tbsp
Black Pepper Crushed ¼ Tsp
Red Crushed Chilies ½ Tsp
Cumin Black Powder ¼ Tsp
Salt 1 Tbsp
Peri Peri Sauce (Optional)
Instructions:
The sauce can be made in less than 5 minutes, and all you need to do is to marinade chicken ahead of time. The sauce ingredients… ginger, garlic paste, green chilies chopped, white vinegar, black pepper crushed, red crushed chilies, cumin black powder and paprika powder. If you want the suicidal heat…, go for 10 or even 15 of these tiny bird’s eye chilies. Put them in a blender. Blend until very smooth. Now take a baking tray pour the grind sauce by adding olive oil, yellow food colour and salt. Mix them well. Now add the chicken and toss well. Marinade at least 1 hr. overnight is even better. Grill your chicken or bake. Bake them in a hot oven (425F) for 20-25minutes; baste with more sauce as you turn the chickens to the other side. Serve with extra sauce on the side (Peri Peri Sauce).
Cook Time: 35 Minutes.
Serve Hot.
