The reason why my ex boyfriend (now my hubby) decided to marry me. *giggles*
INGREDIENTS:
1 Kg Pork belly (liempo) cut into 2inches cube.
1 Head Garlic Minced much better if pounded in almirez until it becomes garlic paste.
1/2 cup Soy sauce
1/2 cup Vinegar
2 tbsp Brown Sugar
1 tsp Pepper corns
3 Pcs Bay leaves
3-4 pcs red chilli pepper minced.
5-7 cups of water.
PROCEDURE:
1. In a deep buttom pan mix all the ingredients except water.
2. Stir Well and let simmer until the sauce became thick. Set aside.
3. In a different pan heat 1tbsp oil, saute another 1tbsp minced garlic until golden brown, add the cooked pork together with the sauce.
4. Continue stirring until the fat comes out from the pork.
5. Add water then boil until the pork is tender and the sauce is thick.
6. Serve with steaming hot rice. (Adobo is also best when served with atchara or coleslaw as side dish)
