Ingredients
100-110 square wanton skins (cut into Hexagon)
Fillings
1kg ground pork (use fatty, chop)
1kg shrimp, peeled, deveined (cut into small pieces)
Seasonings
11/2 tsp salt
2 tsp corn flour
1 tsp chicken powder
A dash of white pepper
Garnish
Tobiko
Carrot, dice
Salted egg yolk, dice
Materials
Parchment paper, Bamboo basket, Brush, Water & Oil.
Methods
1. Add all the fillings & seasonings to a large bowl, mix well together with clean hands.
2. Put 1tbsp filling in the centre of wanton skin, wrap and press firmly around to form a round shape.
3. Brush Siew Mai bottoms with oil and top each with garnish salted egg yolk and carrot dice. (Can garnish withTobiko before or after steaming)
4. Place Siew Mai in a bamboo basket lined with parchment paper with hole. Spray water to moisten the wanton skin.
6. Steam over high heat for 6 minutes. Do not steam too long otherwise the meat will be tough.
7. Serve hot and perfect with sweet chilli or chilli sauce.
