INGREDIENTS:
- 6-8 boneless chicken thighs
- 1 14.5 oz can corn (frozen or fresh will work as well)
- 1 14.5 oz can black beans - drained and rinsed
- 1 cup salsa
- 1 tablespoon flour (to thicken the chicken juices as it cooks)
- 1 tablespoon ground cumin
- 2 tablespoons ground chili powder
- ½ cup grated cheese (most any kind works)
- salt and pepper to taste
INSTRUCTIONS:
- Preheat oven to 375 degrees
- Spray a 8 x 8 baking dish with non stick spray.
- Add all ingredients excluding chicken, to the baking dish and stir.
- Nestle chicken on top.
- Bake for 40-50 minutes or until chicken is cooked thoroughly.
- Top with grated cheese.
- Serve with avocado (optional)
